Crémant de Limoux
In 1990, the Crémant de Limoux received its AOC label.
Its grape variety consists of a maximum of 50% Chardonnay and Chenin (between 10% and 40%). Pinot Noir is present at a maximum of 30%, Mauzac 20%.
The wine is not drawn until after January 1st of the year following the harvest, it must be kept 12 months on lees and it is marketed only after 15 months of ageing on slats.
